Waukesha residents can soon add another restaurant to their local repertoire.

Firehouse Subs, 120 E. Sunset Drive, confirmed Wednesday, April 12, that its projected opening day is April 25. The eatery will be one of four new dining spots at or near the Sunset Crossings development – which once housed the Waukesha Kmart – on the city's south side.

Einstein Bros. Bagels and Caribou Coffee, which will share a single space in an outlot building with Firehouse, and a Panda Express, at the corner of Sunset Drive and Tenny Avenue, are the other new restaurants. A third space in the outlot building, between Einstein/Caribou and Firehouse remains vacant.

A call seeking information about the opening of the Einstein/Caribou cafe was not immediately returned. But both companies distributed free samples of their products at Carroll University on Tuesday, April 11.

Continued development of the Sunset Crossings property comes amid the ongoing redevelopment of Sunset Drive, which has become a local shopping destination. Projects that have contributed to that growth include Sunset Crossings, the Meijer supercenter and the Shoppes at Fox River retail center.

The former Kmart site – a 115,857-square-foot building on 11.7 acres – now houses an Xperience Fitness, Dollar Tree, Rogan's Shoes and Kohl's Off/Aisle.
